Another Spinach Artichoke Dip

You know whenever you go to any get together at someone's house and your supposed to bring a covered dish that someone, or two, will show up with a spinach artichoke dip. Honestly, I love dips and  spinach artichoke has always been way up on my list as a favorite. As a hostess, you need a good recipe for this favorite at any gathering. Well, not be outdone by all the million recipes of the same thing, I am going to give my recipe. Mine is a little more spicy as I prefer my food to have more of kick...heck yes!!! 


Spinach Artichoke Dip

1 bag of fresh spinach, stems cut off
1 14 ounce can or jar of artichoke hearts, drained
1 8 ounce pkg. of cream cheese, softened
1 cup of sour cream
4 1/2 minced garlic
1 teaspoon of fresh ground black pepper
1 teaspoon of hot sauce, add more for a kick :)
1 1/2 cup of shredded mozzarella
1/2 cup shredded parmesan
1/2 teaspoon of paprika

Preheat oven to 350 degrees. Using your stand mixer, pour the spinach, artichokes, cream cheese, garlic, pepper, hot sauce, 1 cup mozzarella, and parmesan into your bowl. Mix using your flat beater until all your ingredients have mixed and your spinach has been shredded. Pour into a oven safe casserole dish and spread the remaining mozzarella and paprika evenly on top. Bake for 30-35 minutes until hot and bubbly. Yummy!!!


* I use Louisiana Hot sauce (about 2 to 3 teaspoons)and if you want to cut calories on this dip you can simply use reduced fat cream cheese and low fat sour cream.

I usually serve this dip with carrots, celery, and assorted breads.

Leftover dip, if you should have any =), makes for great yumminess inside of grilled cheese sandwiches with ham or even as the sauce in your pasta, just add hot cooked noodles and mix.
